Love Mexican food but not sure how to make it? Try this recipe on for size...

ANNIE'S TORTILLA-BLACK BEAN CASSEROLE

INGREDIENTS:

2 cups onion, chopped
1.5 cups green pepper, chopped
1 14-oz. can chopped tomato, liquid included
3/4 cup Picante sauce
2 gloves garlic
2 teaspoons cumin
2 1-lb cans black beans
12 corn tortillas
2 cups shredded cheddar

In a large skillet bring to a boil:
onions, green pepper, canned tomatoes, picante sauce, garlic, and cumin

Simmer, uncovered, for 10 minutes

Add 2 cans black beans

In a 9 x 13 baking dish put:
1/3 bean mixture on bottom of dish
Cover with 6 corn tortillas (layer if necessary)
Layer 1 cup shredded cheese on top of tortillas
Add 1/3 bean mixture on top of cheese
Cover with 6 corn tortillas
Add last 1/3 bean mixture on top of tortillas

Bake @ 350 degrees for 30-35 minutes

Sprinkle 1 cup of cheese on top of finished casserole

Let stand 10 minutes before serving.

Serve with a side salad and cold beer!
